 The Delights of Living FoodAs you begin your journey towards living food, keep in mind that you can learn something new every day. Some people progress more quickly because of their special needs (illness, fatigue, etc.), whereas others decide to proceed more slowly. Regardless, the reason so many people are turning to living food is out of concern for their health, and a desire to avoid joining the growing number of people afflicted with terrible degenerative diseases. Clearly, “we are what we eat” – our food intake is one of the most important factors affecting our health.
 
Scientists and experts in nutrition recommend that we increase our consumption of fresh fruits and vegetables, in order to ensure that our body receives a sufficient supply of nutrients. These “building blocks” are essential to the development of cells, tissues and strong, healthy organs. More and more, we are coming to realize that it is to our advantage to consume foods in their natural state: in other words, living, or raw foods. Eating living food preserves its nutritional potential, and retains its enzymes, vitamins, and God-only-knowswhat other nutrients science has not yet identified.
 
If you have already tried to change a habit, you have surely noticed that it is not always easy. That is why the majority of people who have decided to entirely or partially adopt raw food eating need help. Some helpful resources include: workshops and food preparation classes, conferences and shared meals (where everyone brings a dish), the Internet, self-help groups, individual support and… books. Especially recipe books!

 

The Author

Jalissa Letendre, author of best seller The Delights of Living FoodBorn in the tropical island of Puerto Rico, Jalissa Letendre grew up in an environment where delicious exotic fruits were readily available. She moved to Québec (Canada) and in 1999 became vegan. Before long, she noticed a clear improvement in her health, and became enthusiastic about documenting her experiences with living food and experimenting with new recipes.
 
In 2000, Jalissa attended a 3 day training course with George Malkmus, founder of Hallelujah Acres, and learned more about the necessity of a living food diet for optimum health.
 
Armed with new knowledge, Jalissa went on to meet the Russian-born Boutenko family, who inspired her to explore the many ways of preparing foods without cooking. The Boutenkos, now living in Oregon, are living proof of the beneficial effects of raw food, which they promote the world over.
 
Jalissa makes the most of her creativity and constantly strives to serve delicious meals. The feedback and encouragement from people who have had the opportunity to taste her food have encouraged her to publish this first book of recipes. The Deligths Of Living Food is not only for those who choose to eat exclusively uncooked food. The recipes in this book will also please gourmets, lovers of fresh and organic foods, as well as all people concerned with their health and well-being.

1/3 cup (75 mL) apple cider vinegar (unrefined)
